When we went looking for ancient varieties of grass based grains, particularly organic einkorn and emmer, we soon discovered that one of the best sources in the country for both these grains, and spelt, was right in our back yard. Small Valley Mill is located in the small valley that bears the name and is run by the Steigman family; Joel, Elaine and Eric. We've know the Steigman's ever since Michael and I presented at a value added conference hosted by PASA (Pennsylvania Association for Sustainable Agriculture) and we brought some of our pita to share with the farmers. Elaine's been ordering pita from us ever since so when we got her latest order, I told her I wanted to come down and deliver it and see what grains they had that we might be interested in. That's how we came home with 50 lb bags of Spelt, Einkorn, Emmer, Rye and Purple Corn. All organically grown and grown in small plots across their growing stretch of farmland.
Joel is the epitome of an American farmer - with bright red leathered skin from years in the sun, a shock of white hair and the kind of energy you rarely see in me over the age of sixty. Elaine is the kind of woman a farmer needs to help oversee the business end of their growing enterprise and son Eric is a lean, wiry stalk of clean farm living who took the time to walk me and Nick around the farm as he pointed to what had been planted where.
Our Ancient Grains Flatbread is unique. We take equal parts Emmer and Einkorn, soak and sprout and combine with a double batch of sprouted Spelt then grind all three grains into a wet mash that we weigh, shape and roll into a very thin, delicate cracker. We only add a dash of sea salt into the grind and none on the top so that those concerned with sodium intact can enjoy this wonderfully tasty crisp cracker that can be traced back to the very dawn of agriculture.
All of our sprouted grain flat breads are low-glycemic, low-carb, low-gluten and are made with either certified organic or small-farm sourced, to-organic-standards wheat and rye that is sprouted for maximum flavor and digestibility.
We do NOT add flour (not one speck), nor vital wheat gluten (check the ingredient label on other sprouted grain breads including; Trader Joes, Killer Daves, Angel Bakehouse, Whole Foods, Alverado Street and Ezekial) nor do we add commercially derived yeast (again, check the labels) nor any of the other additives or "dough enhancers" found in nearly all other breads, sprouted or not. To our knowledge, this is the only sprouted whole grain bread on the market today made from 100% sprouted whole grains that has been naturally leavened resulting in a bread as digestible as it is amazingly delicious.
In other words, our process of both sprouting the grain and introducing a ferment alters the formation of gluten.
Does it negate gluten completely? No. Absolutely not and if you're celiac, you need to exercise caution when sampling our breads.
However, if you have ever wanted to go back to a natural, wheat based bread that, this is your first, best choice. And besides, it tastes great. Our bread has the full flavor that bread use to have back in the days when all breads were made using these natural, time tested methods of either preparing grain through sprouting or using natural ferments, or, as in our case, both. It makes a difference. Trying is believing.

"Everything" seed topping includes flax, poppy, sesame, pumpkin, and sunflower seeds.
'Pan Loaf' is a style (shape) similar to what is most commonly seen at supermarkets, whereas our 'Artisan' loaves are hand shaped by our skilled bakers. Actually, both pan and artisan and hand shaped. The only actual difference is that the pan loaves are baked in a pan.
Garlic Pepper - We create a perfect blend of diced roasted California garlic with freshly cracked peppercorn then roll into the dough and sprinkle the crust. This loaf of bread is savory, potent and not easy to put down.
Salted Pretzel - This is our newest specialty loaf, prior to baking, we mist this loaf with the same baking soda concentrate we use with our pretzel crisps flat bread to give this unique bread a deep, dark Bavarian crust then top with pretzel salt. The flavor permeates nicely thru the entire loaf. Great sliced with soft and hard cheeses, mushrooms and other toppings.

Super Thin... Very low carb - ideal as a small sandwich bread. NOT recommended for toasting.
Thin... Low carb. Use for a sandwhich bread. Not recommended for toasting.
Standard.... Makes an excellent toasting bread.

We take our three ingredient dough - sprouted organic wheat, filtered water and a small amount of sea salt - we take that naturally leavened dough and hand shape into round patties then bake. These patties pocket in two to three minutes and they are done. They are gorgeous, durable (stuffable), and, if you cut them around the seam, they make a great bun.
We size them a little smaller than most standard pita because we love to toast them. In the toaster, they pocket all over again and get steaming hot on the inside.
The process is labor intensive, hand cut, shaped and rolled into these perfect patties.

We take our sprouted, organic loaves, chop and grind them up into a fine crumbs then lightly bake until all the moisture is gone and a perfect dry bread crumb remains. CCBG panko is THE perfect topping for salmon, salads, parmesan crusted broccoli, etc., etc.
Each bag of sprouted panko contains just two ingredients; sprouted organic bread crumsbs and 1% sea salt. Bags are filled with 11 ounces of panko and are packaged in a resealable, foil lined bag.
